BROWNIES!

Eric and I made these last week for the company that came over yesterday.

1/2 cup butter

1/4 cup cocoa

2 egs

1 cup sugar

3/4 cup flour

1/8tsp salt

In a small sauce pan melt butter & cocoa stirring as it melts, remove from heat.

In a medium bowl beat eggs until frothy, add sugar, flour and salt-pour cocoa mixture over top and stir all together.

Bake in an 8×8 pan (I line it with parchement paper) at 350 for approx 30mins or until the sides begin to pull away.

Icing:

1 1/3 cup icing sugar

1/3 cup cocoa

3 tbsp margarine

5 tsp water

Beat together and top the brownies once cooled.

On a side note, these brownies always remind me of my Oma.  I think that icing is exactly how she made “chocopasta”…she always had a jar on hand when I came over to visit!

Aunt Tracy and Eric reading his new book!  (Just In Case You Wonder by Max Lucado) We received this book from London Christian Elementary School when we visited last week.

At this point we are about 90% sure Eric will be attending LCES.  Now we have to decide if he should attend for Jr Kindergarten or if we should wait until the following year for Sr?

WOW, it’s starting…part of me didn’t think we would actually do it…but now we HAVE to!  Today was step one of the renovations…it’s always so interesting to see what you find behind the walls and under the floor.  The most interesting thing we found today was that the original paint colour is the same as it is now, or VERY close anyway!  The floor was soooo ugly…and Eric asked if it was ‘the new beautiful one!’  ha ha…

So this is what my house will look like for the next few months:

(those tomato’s are for our company tomorrow)

anyway…here are some before an after pic’s of todays work…basically we (Kev) had to take out one section of cabinet & remove the table, rewire the stove (which still needs to be done).  Keith is coming to build the new closet on tuesday/wednesday…wednesday night the cabinet guy is coming to finish the design and make sure everything fits!

On to-todays picture….guess which tool doesn’t belong???

Eric and I made this ‘robot’ the other day!  So fun…he loves using it..although it’s so long that he can’t sit or bend in it..which makes playing a bit tough!

I just love it when they kiss!

Jeremy is all about kissing…he actually did this 3 times in a row to Eric…I’m surprised that I didn’t catch Eric’s hand mid air while he said “I DON’T NEED KISSES“  that’s what he usually says to us!

The most simple casserole EVER!

Fry one pound of ground beef with seasoning and a chopped up onion.  Boil veggies (I use frozen mixed veggies).  Layer the ground beef, veggies and then put frozen “Tasti Tators” on top.  Mix together a can of cream soup and 1/2 a can of milk, pour over top of the “Tasti Tators”…top with cheese and bake about 20mins covered and about 10mins uncovered.  The top will be a golden brown.

(have I mentioned that I don’t follow recipes?)
