sweet SWEET precious baby!

Although baby “M” was a tiny bit fussy when I got to visit her, we were able to capture some very sweet moments!

I was inspired to this project from a fellow photographer that I met online!  Her work ROCKS, so go check it out!  Lindsey Q Photography

Jessica, another wonderful photographer, check her work out here:  Live the Moment Photography and I discussed documenting her pregnancy they way Lindsey has done!

We are off to an AWESOME start!

Salsa!!!

I have to admit, canning is not my #1 favorite thing to do…but homemade Salsa is amazing!
Today I have included a recipe and some pictures from the day…I know that pictures say a thousand words, so maybe my pictures will help you enjoy a tasty homemade snack! :)


Recipe:
8 cups chopped tomato
1 cup chopped chili peppers
3/4cup chopped red pepper
3 cups chopped onion
1 cup vinegar
3 cloves garlic
1 tbsp salt
1/2 tsp pepper

The first thing you need to do is remove the skin from fresh tomatoes.  I do this by placing an ‘x’ on the bottom of them and placing them in boiling water for a couple minutes.  This is what will happen:

This is a DOUBLE batch…I had two pans simmering all afternoon..then I joined them together for about the last hour. It boils down to about half!! This picture is shortly before I actually placed it in cans.
You must be careful not to burn it at any time. If you feel it ‘sticking’ to the pan pour it into a new pot-seriously not worth the risk..It really ties you down for the afternoon…but I did make some raspberry jam in between and do some cleaning etc. Just remember to STIR STIR STIR

While the video crew was here they offered to shoot a couple family pictures for us!  I was thrilled since I’m rarely on the other side of the lens with my boys!
