Salsa!!!

I have to admit, canning is not my #1 favorite thing to do…but homemade Salsa is amazing!
Today I have included a recipe and some pictures from the day…I know that pictures say a thousand words, so maybe my pictures will help you enjoy a tasty homemade snack!

The first thing you need to do is remove the skin from fresh tomatoes. I do this by placing an ‘x’ on the bottom of them and placing them in boiling water for a couple minutes. This is what will happen:

This is a SINGLE recipe (note the time):

This is a DOUBLE batch…I had two pans simmering all afternoon..then I joined them together for about the last hour. It boils down to about half!! This picture is shortly before I actually placed it in cans.
You must be careful not to burn it at any time. If you feel it ‘sticking’ to the pan pour it into a new pot-seriously not worth the risk..It really ties you down for the afternoon…but I did make some raspberry jam in between and do some cleaning etc. Just remember to STIR STIR STIR

What a sweet baby girl! 9 day old perfection! We took out a bunch of props for this session, it’s soo sweet!

Moms give this day an A+!
Moms who run a business or two from their home give this day A+ x 1000! 
(me and my BIG boy)

With mixed emotions I sent my little eyed blond on the bus! His driver greeted us with a huge SMILE! WOW, a nice way to start the morning (an early morning, 7:15 pick up)!

And I sit at home waiting for this ‘cute’ face to return home!

And now I turn him over for another year of learning to John Knox Christian School!! A great school, with amazing teachers…awesome support staff and well, just an wonderful community! I love that he spends his day learning about God in every aspect of life AND he has great role models!
Thanks to the teachers, principal and organizers on various committees for pulling off a great first day!

YUMM-O!
Homemade Ice Cream!!! It is seriously so delish!
A couple of weeks ago I received an ice cream maker! I wasn’t sure how often we would use it..or how creative you can become with one! WOW WOW WOW …I have so much ice cream to make and SO little time! We have had a batch every night for the last couple days…and I’m trying to dream up how I can stop at a variety store tomorrow to pick up some kind of chocolate bar to crush in it!!
When Kevin and I first started dating…his Sister and brother in law would make home made ice cream…they always served it at birthday parties and occasions! So this new obsession is bringing back lots of memories!!!
For those interested here is the ‘how to’:
The Ingredients: (eggs, who knew? Eric was MIGHTY surprised by this..and has been calling this ‘eggs cream’ as a result!

Pour everything into this frozen ‘bowl’:

Put the lid on and turn it on:

Tonight we enjoyed Smartie…and I plan to make something else fun for the weekend!!
